And yes, I'm off topic too. This would be the last time I comment on this. I don't want to see this becomes another 10 pages argue like the wonton noodle thread.

Btw, now I remember...my aunt didn't use rice cooker to cook rice....she uses 不銹鋼煲 and make it with 飯焦 as well. Amazing!

It is not too difficult to make the crusty rice, as long as you have a heavy gauge pot.
In cooking class for Caucasian, Japanese, Szechuan, Thai , Vietnamese and  Easy Indian cooking, I do not
use rice cooker, I use the pot of pressure cooker, cook in the normal manner. The result always turn out good.
Just adjust the water ratio according to the recipes,  clean up is relatively easy too.
I insist that I have no intention to get into dog-fight, I did not even reply to some challengers,m simply start another
posting. I only say what I actually  know about and what the fellow LYK would like to hear;
the proof is in the replies.

First, we are discussing about煲仔飯 and how to cook煲仔飯 AT HOME. Any input about the food ingredients, method of cooking and utensil to use should be welcome. DO YOU AGREE?

Second, post #101 is an extended answer of post #84 to the recommendation of Somewhereintime (he recommends Japanese clay pot for 煲仔飯).

Why do over 85% of Chinese restaurants use Chinese clay pot (according to Somewhereintime) instead of Japanese clay pot even though they cannot or will not cook properly to have the瓦煲香? It is because they know their customers know only the food cooked by Chinese clay pot will have the 瓦煲香. If they want to have customers, they must use Chinese clay pot to satisfy their customers.

I just state the fact and it helps LYK to choose the proper utensil when they want to cook a pot of delicious 煲仔飯. DO YOU AGREE?

Third, I mentioned about clay pot rice cooked in a tiny 紫砂煲 is to let people know that there are other style of煲仔飯 out there as well beside the Cantonese style. 紫砂煲飯 is nothing high-tech nor is expensive or fancy. I tried it in a tiny home style restaurant (10 customers max) run by a mid-age couple in an old tiny Shanghai style house waiting to be rebuilt in Shanghai.

Knowing about other style of煲仔飯 will help LYK to be more creative when they cook a pot of煲仔飯 AT HOME. Therefore, it is relevant to the topic and it is helpful to the discussion. DO YOU AGREE?

In conclusion, you should reconsider whether it is appropriate for you to be policing the forum and give out yellow or red cards based on your personal preferences.

I have a Le Cruset frying pan for steak, plan on getting a pot too. But I don't want to get it just for cooking hotpot rice. I am trying to find out what else I can do with it too. You know, an extra pot means extra space is needed for storage!

First my comment on your "off topic" post is solely base on #101. Your previous thread I didn't comment on. Whether you point out your idea for the sake of benefit for LYK to have knowledge of "bo jai rice" or your purpose is just to pick on someone, only YOU know.
At least, from your tone, I sense you rather pick on someone than sharing information.

I'm not superman...I don't have the authority to stop anyone from posting. As I said in another thread: 始終鹹魚青菜,各有所好,你唔會為咗我嘅喜好而改變,我都會繼續我嘅吹水。I don't like off topic post for the sake of picking on someone. I don't mind fighting, always better to start another thread. That's my 2 cents. It's just my preference, other people may feel it different. Of course, you don't have to agree with me.
