Little history: 雞蛋仔 used to be 魚米鄉, until one of the partner bailed so the other partner took over completely. Current 雞蛋仔's owner is the same owner of 北角雞蛋仔 in the night market. He is also the guy that was interviewed multiple times by the local and Chinese press for excellent entrepreneurship.
From the early years I started to eat their food in the night market, I have not have anything better (Aberdeen, Parker Place, Admiralty). Their taste and texture have not changed. Just that the kitchen staff are still new to make it perfect, in fact, night market doesn't even taste as good as they are rushing them out.
Noodle wise, they are trying to compete with 鹿園. But I was told they started to experiment with new flavors and more HK street food. So, I think it's a good place to go for some snack if you are not too hungry.
