You are correct, Bone-In would add extra flavour to meat it is my choice of meat (I eat steak once or twice a year only)
Gotham is good but over-priced, also noted that some US steakhouse would age the steak for up to 42 days.
Ruth Chris is worth the special trip to Seattle.

Gotham is okay.... their portion is huge... if you don't mind to look bad and share a steak, it's not that expensive.

Taste/quality etc-wise tho, Gotham's probably one of the best, if not THE best in Vancouver

been to gotham, good steak, price is just like how much you would spend for a fancy dinner, if u look at it that way, it is not THAT expensive, u can easily spend a couple hundred at la crocodile. lumiere...etc la, once a year special occasion dou acceptable la

AAA that's right, but they are Vacuum aged, the texture is weird and the smell, well I'll pass.
I'd pay a little more for dry-aged beef. Most of the butchers would only dry age beef for 14 days, try to find some good
aged steak.

I go to the one at Hyatt Grande Hotel, only walking distance from Pine Street Farmer Market.
Always go there for ribeye steak, luncheon is more affordable.

I have business account with some commercial meat suppliers:
Intercity HRI,, Centennial, Sysco & GFC Neptune,  
For retail, I would recommend  Beefway on Kingsway at Slocan,
Columbus on Renfrew, Amando at Granville Island Market.
Organic meat is more natural and humane, and studies show that
they are easier to be absorbed by human body.
I eat red meat once or twice a month so it does not bother me much.
Is it really worth the different in price? you make the decision.

Vacuum aged means wet aged usually, but it's vacuumed so that the meat won't be spoiled in a normally uncontrolled environment.
It's a cheap way to age the meat.

Also, for me, vacuum age doesn't have weird taste, I guess it depends on the wrap and the way it was vacuumed.  The meat was packed vacuumed to deliver before dry aged anyways, unless you cut the cow yourself.

For commercial account, I find trimpac and intercity have better quality than any others that I know in terms of Steaks.  Sysco bought Trimpac now, but sysco's own brand of meat sucks.   Btw, the meat from T&T is the worst I ever tried.  Costco's good deal.

PS. I never knew Keg, or chop, or etc... is high end steak restaurant.  I always thought they are casual quality with casual price.

Dry Aged乾式熟成 is half of steer hang dry at 8-10C for 7-42 Days, would cause 12-18% lost in weight but very intensive beef flavour
Vacuum Aging is placing beef cut(i.e. New York Strip) in plastic bag and suck out oxygen, the natural enzyme would break down
the protein(tenderizing the meat)  without causing weight loss, and free up cooler space. it is much more economical way of
processing and widely used in commercial meat business. But I cannot stand the smell.
Also, the dry  aged beef has less moisture content, there you get more beef for your money.

The meat I buy from small butchery got their steer halves delivered  hang- dry, they would break down
the steers themselves and continue to air dry, no wrapping at all unless requested by customer.
The weird smell  become significant when you compare the identical cut of beef side by side.

It is relatively expensive for restaurants other than premium steak house, My client  are very picky  diners
and willing to pay for the price. I don't think Dr. JJ would want to  feature it.
I'm expressing my own opinion, not interested in  confrontation.
T & T also sell higher grade beef with a price tag to match.
Their inexpensive buck pack beef are from Uraguay, I think it would be alright for Vietnamese Pho or make
some nice Cantonese steak in Tangy Sauce.  $2.99-3.99 per pound retail? you get what you money worth.

not the supermarket type.
I'll need to buy 50 pieces dry-aged AAA ribeye steak for next weekend and I'll have the quote

Striploin  has better flavour but less tender, I would use it for slow roasting so
I do not need to buy top quality. Yes, you get more lean meat for your money

Also someone from LYK asked about  Extreme  Australian Fresh Lamb Rack, 18-20 0z per rack,
about double size of new Zealand Spring lamb. They come 2 racks per package, x 20, works
out to be $22 per rack.  That is something only the top private chef can afford, not even 4 Stars Hotels.
Unless you are willing to pay $150 for dinner for 2.

I meant using Dry Aged AAA beef for prime rib is luxary,  but it is much easy and cleaner to cook at home compare to steak.
The lamb is by far the best meat product available here, except for the fresh Saltspring Lamb. Actually it is quite inexpensive.
$22  intimate dinner for 2.
I always use the best quality product available, yet they are quite affordable.
A trip to Granville Island and you would know how expensive foods can be.

Ribeye steak are best cooked on Charcoal or broiled, other cooking method would not
work as well. Maybe Teppanyaki? which I am not a big fan of

recently went to ruth's chris in in bellevue. i made the reservation online. and they actually called me to confirm my reservation a couple hours prior to my reservation time.

anyways, they are doing the fall/winter special there. they offer two different types of 3-course meals for $39.99 usd and $49.99 usd respectively.

for the $39.99 menu, there are 4 choices of soup/salad, then 3 choices of entree: filet, chicken, something else i forgot, then dessert is carrot cake and chocolate mousse (no choice for dessert)

for the $49.99 menu, there are 4 choices of soup/salad which are the same as the $39.99 menu, then 3 choices of entree: ribeye, and i don't recall the other two, then dessert is the same as the $39.99 menu again.

for both menus, the entree comes with side orders, 4 choices to choose from: cream spinach, mash potatoes, green beans, and something else i forgot. we had the mash potatoes, and cream spinach.

we chose the filet (medium rare) and the ribeye (medium well). as for dessert, we didn't go with the carrot cake + chocolate mousse. we picked something else from their regular dessert menu and it costed an extra $3 for the switch per person. we had the cream brulee, and the raspberry sorbet.

i think the meat was delicious. the presentation wasn't that great but it tasted very good. and it was cheaper than expected. if you order from their regular menu, it will cost you $40+/- for the meat (no side orders) so i think this fall/winter menu is a great deal. the side dish was bigger in size than i expected. i was really hungry and i managed to finish everything.
