張教主今日講歲晚收爐解釋話因為要熄爐火收咗個爐火
廚房過年唔開工唔係要熄爐火
而係個爐燒咗成年要修理
歲晚修爐係趁過年冇開市
請人去修理個爐唔係因為開爐要好耐好麻煩
我靚仔時就過年去過酒樓修理爐灶喇
所以歲晚係修爐唔係收爐
張教主係呃C9亞嬸就得

■酒樓茶樓的收爐傳統，不知今日依然在否？

　歲月悠悠，光陰似箭，又是一年將盡臘鼓頻催的歲晚時候，意味著傳統的農曆新年就快到了。人們有否留意，越接近農曆新年，市面就逐漸見到「歲晚收爐」的張貼映入市民的眼球，一直伸延至正月初六七，又逐漸消失。意味農曆新年假期結束，市面上各行各業又告啟市。

　時日的推移和觀念的轉變，似乎並沒有把「歲晚收爐」這個香港獨有的特色淡化或消磨。從上世紀四五十年代到六七十年代，一直到今時今日，「歲晚收爐」一直在春節大年初一至七懸掛在大大小小的茶樓酒家門口，甚至在大大小小商店商舖。

爐火暢旺生意滔滔

　「歲晚收爐」究竟反映什麼呢？大抵有兩個情況兩種意思。一是表示在農曆新年期間放假，休息過年，不開門做生意。貼上「年三十至初二三收爐，初六初七啟市」的紅色招紙告示，讓顧客知曉欲想光顧請於啟市日前來可也。

　另一個指的是常見酒樓酒家的「歲晚收爐」。收爐之後，急於要做的大事就是「修爐」工程，即修理爐灶爐頭爐具。據老一輩的茶樓從業員說，在上世紀五十年代開始，茶樓酒家已經出現「歲晚收爐」這種「告示」，可說是始祖。後來一些行業及商舖才逐漸有樣學樣，蔚然成風。

　茶樓酒家的「歲晚收爐」，有別於其他行業。因為茶樓酒家一年到晚都要開著爐頭爐火營業，絕少在平日停業休息，只有趁著農曆新年幾日假期才無可奈何「收爐」。一來讓員工放年假休息三數日，二來也讓爐灶「歇一歇」。茶樓老闆多數利用這收爐的三數日時間著三行泥水師傅修理一下爐灶，或者全新打造一個新爐灶，以便未來一年三百六十多日爐火暢旺，生意滔滔。

　當然，這裡說的是上世紀數十年前茶樓的故事。以前的爐灶不似現在這樣先進。十之八九都是用防火磚或普通青磚堆砌而成。由於一年到晚都經猛火燒灼，防火磚也不免燒損破爛。通常一至兩年就要維修或大修一次，否則，就對爐火產生「閉塞」，影響煙火往煙囪排洩，甚至濃煙倒吹。

　正所謂通通氣氣就和氣生財。一間茶樓酒家的興衰和有運，爐灶是一個重要關鍵，縱然有個出色的大廚師，也得要靠一個好爐灶。爐灶唔好，爐火唔暢通乜廚都「死」。因此，茶樓老闆一到「歲晚收爐」前夕，若是有心修爐的話，就會事先去覓識一些專打爐灶的三行泥水大師傅。

獨門生意捱更抵夜

　筆者在上世紀六十年代初入行當三行泥水的小學徒。跟了打灶師傅連續做了三年歲晚收爐的幫工（即挽泥斗），箇中滋味頗為深刻，至今依然歷歷在目。專打爐灶的三行泥水師傅與普通建築樓宇的三行師傅有小小區別。除了技術不同之外，工作及工作時段也不同，打爐灶師傅一年四季，最旺的就是歲晚這個檔期，一年可能只有那段日子才有工開。大有三年唔發市，發市當三年之感。人工不以日計，多以整個爐灶工程計，價錢較高。因為是獨門生意，每到歲晚年初，許多茶樓酒家飯店都趁收爐的短短數日進行修爐，不愁無生意，不愁無工開。當年專打爐灶的師傅著實不多，奇缺似皇帝女唔憂嫁。一個歲晚的修爐收入，往往可抵得上三數月的入息，認真「和味」矣。

　但有這種高收入，往往是用血汗辛勞和捱更抵夜掙取得來的。一間茶樓酒家要打一個新爐灶，時間只有三數日的「死限」，打灶師傅必須要在短短的限期完成。承接工程的師傅唯有利用日以繼夜的二十四小時趕工。筆者試過連續兩日兩夜未曾睡過，直到工程完成為止。辛苦難頂之處不足為外人道。

　打爐灶最辛苦最難捱的時候就是先拆舊爐灶這一工序。拆了舊爐灶才能原址打番一個新爐灶。有許多情況在拆舊爐灶時，那些磚塊依然灼手，而且沾滿油污煙灰，一陣陣刺鼻的味道充斥整個廚房，令人欲嘔。當拆完舊灶時，那些師傅和學徒幫工無不變成了非洲黑人模樣，連說話也感困難。聽那些有經驗的師傅說，一定要飲廿四味涼茶才能「復元」，並叫筆者這個初哥要多飲幾杯廿四味涼茶；否則，隨時「中招」後患無窮矣。連續做了三年的歲晚收爐學徒幫工，每次都在三五數日，但感覺就是這行獨特打爐泥水職業飯不易吃。有如是賣魚的人賺到的錢帶「腥味」，而打爐灶的人所賺到的錢充滿「污油味」，大有半斤八襾，彼此彼此的辛酸滋味。

通氣「扯火」谷氣「死火」

　在上世紀六七十年代的舊式大茶樓老闆對歲晚收爐之後的修爐是非常重視緊張的。因為廚房爐灶涉及好多方面，尤其是鑊氣，俱是吸引顧客的首要關口。顧客挑剔的多是炒小菜夠不夠鑊氣，然後才是味道。要有好鑊氣，當然離不開有個好爐灶，好爐膽。爐灶好與不好的分別在於通氣與「谷氣」。通氣就「扯火」，「谷氣」就死火。搵到一個打爐灶好師傅打個靚爐灶，就是茶樓賺到口碑的開始。

　筆者雖然連續跟了打爐師傅做了三年歲晚修爐「學藝」，還是摸不到（偷師）打爐的竅門究竟在哪個方位，後來才聽師傅說關鍵在於灶內與排煙的夾角位，大約一兩個磚位的擺放及高低。聽來很易，能夠做到通通氣氣，那就非要一段長時間「學藝」不可。

　隨著時日的推移和科技的日新月異，茶樓酒家的爐灶也在不斷改變。也少有像過去那樣全部用防火磚或青磚建造，而改為不鏽鋼金屬之類的設施設備配套了。尤其是爐膽和抽風裝置更為先進精良。每年歲晚收爐的修爐已經不是三行之打灶師傅所能應付得來，已由其他相關行業的技術人員所代替。看來從事專門打爐灶的師傅已屬稀有「珍品」，難尋也。

　但，酒樓每到歲晚年初都照例張貼一幅紅色招紙寫上「歲晚收爐」啟事貼在酒樓門口，似乎成為這個行業的獨特標籤，不因時日推移而有所改變。相信在十年之後還仍流行照樣在農曆春節前後隨處可見。

there are so many  professional stove installation companies
in Vancouver;  other than just clipping some random internet  info
and believed to be the only  truth.

First, 歲晚收爐 is a Hong Kong traditional culture. What the hell does it have to do with knowing how a stove works?

that would have nothing to do with the tradition.
There is something call maintenance, you do not wait until everything broke down to
deal with the problem, what if the stove cracks 2 weeks before new year, would you
wait until then. Tradition does not start today, it goes back by decades.
