Anyone knows that if Pad Thai should be spicy or not?
I know the basic of it consist of tamarind, fish sauce and palm sugar.
Should it has other spices? Should it be spciy at all?
Thanks!

In most cases NO作者: 布小熊 時間: 2011-1-17 13:34
I don't mean the N. American style.
I mean the authentic one in Thailand or here.
Cos I had one that was just sweet and sour and had no sign of any chili.
That's right, the sauce is basically tamarind, fish sauce and palm
sugar.
Fresh sliced chili and bird's dropping chili are served on the side.
and sometime, the rice noodles is cooked in chili oil.
I see. Well the one I had yesterday had good balance of the 3 elements but not very good wok "air".
However, I asked for spciy and the server said sure, she would bring chili on the side.
And I ended up getting some "veitnamese red chili paste" (the one with the chicken on the label)
@@ that totally threw me off!
It is more like braised hor fun,
since the Thai start with semi dry noodles,
then add water to soften the noodles during
cooking. Quite different from Cantonese style
cooking. But it is good作者: 布小熊 時間: 2011-1-17 16:42

Thanks guys!
I think the ONLY weird part of the Pad Thai I had was... The Rooster chili paste.
Otherwise, that Pad Thai has good balance. May be I will bring my own chili to add to it next time.
