Here is some basic info of the labels.
Even for organic chicken (non-yellow oil skin) there are different breeds. So their flavour varies.

Thanks Fibbi,

Gwai lo chicken has no taste.  I am looking for Chinese organic 走地雞.

I think it's a different flavour. local free range/organic chicken can be tasty too.
I had the polderside farm RedBro chicken (a heritage breed from europe) and it was tasty and ... expensive. I only had it a few times (dinner at restaurant, dinner at my friend's place and cooked it once myself).
But it's not as "yellow oil" or springy skin as the Chinese breeds.

For regular organic chicken, I usually get Thomas Reid Farms' birds from Choices. Their price is pretty good on sale. Good for roasting but not so for "drunken chicken". So it depends on what kind of dish you cook with it.

Thanks.  I will go check out the RedBro chicken.  Windsor Meat seems to be selling them.
