Normally when I eat prawns, I will get rid of the head. But someone tell me I can use the haed to make soup / sause, anyone can tell me how can I use the prawn head to make soup / sause, thanks!

槟城福建面也称為虾面,那究竟是要吃虾还是吃面 ? 答案 : 都不是.虾面的精华是虾汤,所以虾面虽然以虾為名,但吃的人目的不一定在”吃虾”.虾汤是用小虾米粒组成的”虾碎”,再加上虾壳(或虾头),用葱头、薑等香辛料,一起爆炒过后,加入辣椒糊,用布带包起来熬汤头(或是煮完再过滤).至於面,也没有一定的选择,最常见的是加硷水的麵条,其次有米粉,甚至金蛋面也大有人爱(金蛋面就是台湾人的速食面).一碗福建面的配料除了肉类的 : 猪肉片、鲜虾,青菜类的 : 蕹菜、豆芽,一般的档口都会附带加卖 : 烧肉、烧肠、鱼丸、鸡脚、粉肠等,让客人挑选搭配.

Nope. But the cook did cook for us few times and it was tasty.

It takes time and a lot of 虾头 to cook a good Hokkien Har Mee.
