RELEASE ...  easliest way to do it ..  is using a chop stick ..  ( but imagine, do it to yourself ! lol )

~ 1.5 lbs is the best size ... usually, "HARD MEAT" when over 2 lbs ..

Depends on different dishes and how you cook it, 1.5-2 lbs could be too small.
