Those 小籠包 from Taiwan companies are not authentic.
小籠包 are originally from the regions near Shanghai. Those from Taiwanese companies or chefs are fake.
I would prefer 小籠包 made by Shanghai chefs.

鼎泰豐 also have stores in Shanghai. Maybe they can hire good Shanghai chefs there.

I suspect 聚 has Taiwanese background. That is why they have 鹽酥雞 on the menu, and their 小籠包 is not that authentic.
