When I was in HK, I went food hunting all over the place. Aside from the street vendors for 雞蛋仔、煎釀三寶、辣魚蛋, etc., I've also had some of the BEST food I've ever tried by visiting to various 老店 all over HK. Take a look at the following forum for recommendations from 朱老闆:

In particular, I really enjoyed 鐵人中國料理's food in Mongkok, but you probably want to go there during lunch when it is less busy.

[edit] 鐵人 is not a 老店, but both 鐵人 and all the 老店's I went to were really, really good~
