    The pig's inards are dirt cheap here, but not fresh and not tasty as fresh one in Hong Kong

It is about double size of the one in HK.
No, too much oil in the congee.
I would eat a pot of fat-free congee by myself at home

They tend to soak the rice in oil overnight before starting to cook the congee,
so even they use only water, still lot of fat.
On the other hand, plain congee is good
