It is not necessary bad thing, it takes a skilled cook 12 minutes to kill and
cut up a King crab for cooking. And they do not just waiting for you to place
the order.
For busy restaurant that sell over 30 crabs a night, they would cut up 20
crabs before 5 pm so they reach your table in 10 minutes, cooking and all.
The presenting of crabs is just for entertaining, the crab get put back into the
tanks.
500 lb  king crab in a crate works out to be about 30 crabs, give or take.
so if they sell 30 crabs a night, that would ring in good sales. and pay the
bill in 2 weeks term.If you do not believe, try to sneak into the kitchen and see what piles on the
kitchen floor.

It is quite  true.
A very interesting information FYIThe King Crab season is almost over in Vancouver, and the price goes up to $16 per pound wholesale,
so they do not make a lot of profit from your dinner.
However the  King Crab season in Alaska starts in early June.
The Alaskan Seafood Council sponsors me  60  premium crabs for my  party  in June,
equivalent to US$7500 whichever  I prefer

    Alaska king crabs and Jumbo scallops,  spotted prawns, Sustainable Albacore Tuna,
    500 Duck breasts, Squab,  organic pork and chicken, goeduck...... so far    Working on farm raised boar, sea urchin, sea asparagus......
