it is because the servers at fine dining premises take their job seriously, they would go to the restaurant an hour earlier without pay to discuss the details with the chef; many waiter/ess I know have U degrees and well traveled, tipping is a way to express your appreciation for proper service.   TIPS  means  TO INSURE PROMPT SERVICE!

You are such a gentleman,  many restaurant employers  consider tip as  the major part of their staff's income so they only have to pay them minimum pay, then they ask the servers to pay 15-35% of the tip to the kitchen staffs and calculate as part of the cook's income

My wife is 4th generation Chinese Canadian, her grandfather somehow got exempted from
head-tax. They were willing to pay the unfair tax because they wanted their children to
become Canadian. It is not always negative. I have been living in Canada for 32 years, yet
99% of the caucasian treat me fairly, especially the more educated ones.

I think we should debate this issue in another thread.
My wife's great grand parent had no regret, although he chose to be buried in China. My wife's grand parents  lived  happily here until their old age.
I surely cannot tolerate being treated  second-class, actually  I was given immigrant status without any effort.  Head-Tax was wrong and the PM had formally apologized to Chinese community.  It was an unfair  imposed tax based on  racial discrimination,  however, it was the choice that the earlier immigrants had made, and they volunteered to pay.
Canada is no Utopia, but I chose  to be Canadian; most of my 32 years in Canada has been  comfortable though I'm distant from being rich.
