Going to Portland w bf in Jan during the weekdays...
any suggestions from LYK about shopping, attractions, and restaurants?
any scenic points that we should stop on our way from van to portland?

If you don't like the drive (it's a long drive anyways), taking Amtrak is a good option. Just pick up a rental car at Portland before hand and you are good to go.

If time permit, take a night off at Seattle would be a lot more comfortable so you could leave at evenings and fully energized for the next day. I was staying at http://www.marriott.com/hotels/t ... tle-north-mukilteo/ for the first night and I got it for $50 a night.

In Portland, we stayed at Red Lion.
