The gloves are meant to protect the hands of the fighter so they don't break it when they hit someone's face.......

If their fists are indeed so harden as you describe, why do sanda people also wear gloves to protect their hands?
I think Kung Fu is more focused either on defense (evade particularly), or on 1 hit kill (not KO, i mean KILL or break your arm or get your eye or whatever), or on weapon based combat (stick, sword, linked rod thingy that Bruce Lee likes to use). Not really meant for sporting purposes.
Evasion is difficult in a MMA/boxing stage. Most 1 hit kill type of deal is probably not allowed by rules, and weapons... enough said....
and they say that guy is Shaolin probably just for marketing purposes/putting a fancy back story to him. I doubt he actually have had any training in Shaolin. Those dudes are probably taught to not use the Shaolin art to do something as 'disgraceful' as making money off MMA and related.
