Unbaked dough should be kept refrigerated, or the will grow wild.
Another tip, brush a little olive oil on bread when it comes out from olive,
it would enhance flavour and prevent the crust from getting brittle.
Unfinished bread keeps well in brown paper bag(not plastic).
Foccacia bread makes good hearty sandwich, grilled sandwich, stale bread can be used
for Bruschetta, crustade and bread crumbs for pan-frying, savory bread pudding, Strata etc.
Please note this is a no-knead foccacia recipe, the dough is relatively soft and spongy.
