They would freeze almost everything from rice, flour to rice paper.
Organic beans are usually lighter in taste. However, the boldness of the coffee itself is still depends on the roasting. I use Lavazza beans and only grind as needed. Beans not grind, I will put it in the freezer in a sealed jar.
Roasted coffee beans keeps for 1 month easily. However, once ground up,
the essential oil dissipates very quickly, so grind only 50 gm at a time

Not necessary, many supermarkets/ high end food markets have coffee beans in bulk bins,
you can just buy 100 gm and up and grind to your own liking.
The one at Whole Foods are quite nice
