Obviously like any other auction, you cannot back-out after you win the bid. You can still do it, but you will most likely ended up with a "non-paying bidder" status; no seller will see to you.
The only other way to cancel bid is to negotiate with the seller, so that you both can cancel the auction mutually without penalty to the buyer/seller.
eBay process is similar to buying online, where you win the auction, pay for the item via PayPal or whatever the seller take, then you wait for the item to be mailed to you.
