I like your scientific way of thinking and I agree science can do a lot. However, for things as straightforward as it seems, science still can't prove that you're your dad's son 100%. So at the end of the day, we're still in a circle? Or another example, science can prove life after death. I think you can only "believe" it or not. My point is that a lot of things cannot be proved by science, so you will not believe in anything that's not proven or can be proven? If so, I think you missed a lot! Many things in life requires faith, like you have faith that the parents you have now love you and care for you.
As in science, nothing is 100%, it allows for more evidence to be corrected, such that the probability that the claim is true will be enhanced as more evidence is collected.
So science keeps changing when more evidences are collected...so when will you know the final result? I hope it doesn't take too long, definitely not after you died.
Btw, by definition God cannot/does not lie. Ancient philosophers can tell you that.
