i don't think it's actually THAT hard. (but then again i'm not the one doing it)
what we do is when our bunny is sitting still on the ground, we put a towel over him (make sure the towel is big enough). the towel needs to cover the entire bunny. then hold the towel in a way so the bunny cannot see - when bunnies can't see they stay still (most of the time =p) then scoop up the bunny with both arms, with your left arm resting on the ground on the left side of the bunny and do the same for the right side with your left arm. and then flip him over. this shouldn't be too hard if your towel is big enough. so the bunny is sort of trapped inside the towel. we usually put him on my bf's lap, then i help cover the bunny's eyes with the towel (make sure he can breath though!) and my other hand'll usually be holding the bunny's hands or feet or the tummy. when someone is holding/touching the bunny firmly the bunny feels safer too so he's less likely to jump.
