Why not?  just like the dim sum.
Cook in big pot and place in small plate-- Tripes, chicken feet, beef offals etc

Thai foods do consist of many small side dishes, Salad, cold dishes,
and grilled/fried  morsels , don't forget desserts too.
Yeah, it is unusual to see AYCE Thai food.
