Are you sure they start pouring the rice in at the time you ordered? This way, if the flame is big enough, would have plenty of overcooked rice sticking inside the pot. Usually what people did is cooking the rice to 1/3 to 1/2 done in advance. By the time you ordered they will spray some cooked oil in the pot evenly and put the pre-cooked rice back...

I cook hotpot rice for supper often, it takes 15-20 minutes cooking from dry raw rice
for most occasion,  except for spareribs which would take another 10 minutes

Any recommendation for restaurants having hot pot rice other than your home?

Not many restaurants want to do hot pot rice because it take up the stove space,
on the other hand, hot pot entrees is much easier to handle, just heat up the pot
and dump the food from the wok, done. and sell it for much higher price.

上次試過個蒸飯, 係唔錯。下次可以試煲仔飯。
反而我想問下D 湯得唔得?

我上次個例湯都好清淡....LOL
用得湯.com 做招牌, D 湯應該有D 把炮下啦。
除左裝修, 仲有D 凳好似好唔實淨, 真係一不留神隨時反凳。
