Make sure that doesn't take into account the raw material cost increase and labour cost increase in the discussion. Otherwise it's just meaningless...

HST got more to do on the revenue (customer) side because general public don't dine out that much after HST...

For example, on a $100 set dinner for 4,

1) in the old days: $100 + $5 (5% PST) + $10.5 (Tips, people 'used to' pay 10% tips for the lumpsum after PST) = $115.50

2) nowadays: $100 + $12 (12% HST) + $10.0  (Tips, people pay 10% tips for the net amount before tax) = $122.00

Net result: Government gets $7 from the meal, but to the server, $0.50 less tips. For customers, $6.50 more anyway -> decrease frequency/incentive dining out...

P.S. - for case 2, some customers will choose to pay: $100 + $12 (12% HST) + $3.50 (Tips - only 3.5% tips before tax!!) = $115.50... which is retarded...

The HST is just one of the factors that hit the restaurant industry. To me at least, the sum of the multiple hits (higher prices of raw materials, min wage increase, recession, increased enforcement against drunk driving, HST, etc.) were greater than each of the individual factors themselves on the industry.

If you need to eat out, then you have to eat out. For me, there is really no difference in my frequency of eating out, before or after the HST. Compared to HK or other places, I think Canada has been shielded from a lot of raises in raw material like flour, sugar, rice, etc. from our high exchange rate already.

CTV interviewed the owner of DeDutch and he said, he'd rather keep the HST 'cause it is too costly to change back to PST/GST once again.
