Most of the Chinese restaurants(especially Cantonese)  merely use stale
BBQ duck from fridge and deepfry them.  Yet to see some properly done
Beijing duck in Metro Vancouver.

    I just had peking duck there last week. it wasn't as good as before...(or as expected)

I have it couple times over there. Last time I tried it in July this year and it's still pretty decent. Hope that's just an exceptional case for your experience...
